Mars Bar Cheesecake

I have made this several times when I’ve had people for dinner. Very delicious, very creamy and filling. I got this recipe from an amazing recipe book called ‘Wicked Sweet Indulgences’ published by the Australian Woman’s Weekly.

Ingredients:
250g plain chocolate biscuits
150g butter, melted
2 tbsp brown sugar
20g butter, extra
300ml thickened cream
50g milk chocolate, chopped finely
3 tsp gelatine
60ml water
500g cream cheese
110g caster sugar
3x60g Mars bars, chopped

  1. Crush the biscuits and mix with the melted butter. Press the mixture evenly over base and side of a 20cm springform tin. Cover and refrigerate for about 30min.
  2. Combine brown sugar, extra butter and 2 tbsp of the cream in a small pan, stir over a low heat until the sugar dissolves to make butterscotch sauce.
  3. Melt chocolate and another 2 tbsp of the cream in another small pan over a low heat or in a dish in the microwave.
  4. Sprinkle gelatine over the water in a small heatproof jug; stand jug in small saucepan of simmering water. Stir until gelatine dissolves; cool 5 min.
  5. Beat cheese and caster sugar in medium bowl with electric mixer until smooth. Beat remaining cream in small bowl with electric mixer until soft peaks form. Stir slightly warm gelatine mixture into cheese mixture with mars bars; fold in cream.
  6. Pour half of the cheese mixture into prepared tin; drizzle half of the butterscotch and chocolate sauces over cheese mixture. Use skewer to create marbled effect. Repeat process with the remaining cheese mixture and sauces. Cover and put in fridge for at least 3 hrs.

CHOCOLATE MASCARPONE TRIFLE

Delicious but very filling. Looks good, can be adapted quite easily.


Ingredients:
1 tub mascarpone cheese
250 ml double cream
400 ml whipping cream
1 tin condensed milk
150 g dark chocolate
2 chocolate chip muffins
2 tbsp cocoa powder

Serves 6

1. Mix the mascarpone cheese with 100 ml double cream, half a tin of condensed milk and the coca powder.
2. Melt 100 grams of the dark chocolate with 150 ml of the double cream and half of the remaining condensed milk, mix till smooth. Leave to cool.
3. Whip the whipping cream
4. Best served in tall glasses, drop a dollop of the mascarpone mixture in each, then crumble a layer of chocolate chip muffin over it, sprinkle some condensed milk and some chocolate sauce over, then another layer of the mascarpone mixture. A big dollop of whipped cream on top and garnish with some grated dark chocolate.
5. Nicest when refrigerated for a while

CRUNCHIE PUDDING

Warning: seriously delicious and easy to make, but very bad for your figure!

Ingredients:
1 tin condensed milk
1 pint double cream
4 crunchies

1. Boil the condensed milk tin in a pan with water for about 2-3 hours, making sure it doesn't boil dry because the tin could explode! Alternatively take the content out of the tin and bring to the boil in a thick based pan

2. Whip the cream and mix with the condensed milk

3. Break up the crunchies into small pieces, add to the mixture and serve

MALTESER SLICES

My absolute favourite no 1 Traybake EVER (and I've sampled a lot in my lifetime :-)

Ingredients
100 g margarine or butter
225 g milk chocolate
250 g maltesers
225 g crushed digestives
3 tbsp syrup
white chocolate for on top

Swiss roll tin lined with cling film

  1. Crush biscuits
  2. Melt margarine, chocolate and syrup together
  3. Add crushed biscuits and 225 g of the maltesers
  4. Press into tin, put in fridge to harden
  5. Melt white chocolate, spread over top. Crush remaining maltesers and sprinkle over top, return to fridge to harden, cut into squares
SULTANA SLICE

The easiest sultana cake ever, courtesy of the Free Church Cookbook. You only need one pan to mix everything in so it saves loads of hassle and dishes!


Ingredients
450 g sultanas
225 g margarine or butter
3 eggs
350 g caster sugar
2 tsp almond essence
350 g plain flour
2 tsp baking powder

Greased and lined square or rectangular tin, medium sized

  1. Cover the sultanas with water, bring to the boil and simmer for 10 minutes. Drain.
  2. Add the other ingredients, fold in the flour and baking powder last.
  3. Put mixture in tin
  4. Bake in oven gas 3 / 170º for 1 hour

CHOCOLATE MARBLE CAKE

Very simple but tasty.

Ingredients:

175 g margarine
175 g caster sugar
150 g self raising flour
3 eggs
2 tbsp cocoa
1,5 tsp baking powder

Greased and lined loaf tin

  1. Cream margarine and sugar
  2. Add flour and egg alternately, beating mixture inbetween
  3. Add baking powder, whisk on high speed for 3-4 min
  4. But half the mixture into another bowl, add cocoa to this and whisk till well mixed
  5. Put the chocolate mixture in the tin first, then the normal mixture.
  6. Put in pre-heated oven gas 4 / 180º for ca 50 minutes
  7. When cool, spread melted chocolate over the top and let this go solid before serving.
