CRANBERRY & BANANA MUFFINS




Very seasonal with the cranberries, these muffins are lovely and moist and they are really quite healthy for you. After all, they contain two different fruits and oats as well. They're utterly delicious, I couldn't stop eating them!

Ingredients:
150g Plain Flour
90g Oats
130g Granulated Sugar
1.5 tsp Baking Powder
1 tsp Bicarbonate of Soda
1/2 tsp Salt
1 Egg
5-6 Mashed Bananas
80g Butter, Melted
150g Cranberries

Method:
1. Combine the dry ingredients apart from the cranberrries
2. Beat together the egg, bananas and butter with a wooden spoon
3. Add to the dry ingredients, stir well.
4. Stir in the cranberries.
5. Divide the mixture over a 12 hole muffin tin
6. Bake in pre-heated oven 190C/375F for 20-25 min
